1 Cup and 1 tbs of glutinous rice flour
1 cup cold water
1/3 cup sugar
potato starch for dusting.
Mix the three ingredients and cook in rice cooker. (You could also steam this or cook in the microwave I believe. I have seen a number of recipes that includes a microwave method so just google for Mochi recipe if that would be easier.)
A note about the glutinous rice flour and water ratio. Most of the recipes you find will call for equal parts of the flour and water but for my personal taste I like my mochi a little chewier and firmer so I add an extra tbs of flour.I pour the mix into a shallow glass dish (like a glass pie plate), put some water in my old fashion rice cooker just cook the amount of time it usually takes to cook my rice.
You could of course make your own red bean paste... but I just buy these when I am too lazy.
Once your mochi mix is cooked, dust your counter with potato starch or cornstarch and roll it out. You could just roll the whole thing out in one go but I was doing it the hard way by rolling a small piece at a time. A better way to do it is probably roll the whole thing out like you would a pie crust then cut each piece with a round cutter.
Once you have your round piece either by cutting it with a cutter or ... not, just put some red bean paste in the middle.
Pinch all the mochi around the bottom.
This is the second piece of red bean mochi I made. The first piece didn't last long enough for me to get my camera.
Depending on your preference, you could either roll out the mochi dough thin or thick. The two red bean mochi on the bottom (side by side) has thinner mochi dough than the one on top so that's why you could see the reddish red bean color more.
