Mango Cake Recipe:
Mango Cake Ingredients
1 Box of Yellow Cake Mix
1/2 Cup of Oil
2 TBS of Coconut Powder (Optional)
1/4 Cup of Water
1 Cup of
Mix all the ingredients together and pour into a 9 X 13 pan.
Bake at 350 F for 30 hour or until the cake is golden and springs back when you press it lightly.
While your cake is cooling mix the toppings together:
1/3 Cup of Milk
1 Cup of Mango Puree
1 large box of vanilla pudding
Hint: I throw these three ingredients into the blender for a few seconds to get it blended really well.
Now from here on there are two options you could go. 1. Add half block (4oz) of softened cream cheese to the blender and blend well. OR Use a spatula to fold a regular sized tub of whipped topping into the blended mixture.
The first option will yield a fairly thick topping while the second option will obviously be a lighter one.
For this cake I went with the cream cheese option but the whipped cream one is also a good one.
Drizzle the cake with additional mango pulp and strawberry topping.
I didn't have fresh mango and strawberries on hand but that would go really well as a decoration. I took this cake to a potluck and it was very popular, although I think the kids probably would've preferred the whipped cream optional instead of the cream cheese one, but most of the adults liked it as it is.
