For this recipe I followed Maangchi's recipe at http://www.maangchi.com/recipe/kimchijeon pretty closely.
I did find that I needed a bit more liquid than the recipe called for but then I wasn't too careful with making sure my flour was completely level so that was most likely the issue.
Oh, I also added corn to my mixture... not part of the recipe... but I like corn a lot and it actually went well together in my opinion.
I cooked all of my mixture in one go but I really should've cooked it in two batches since the pancake came out pretty thick. I personally preferred the Kimichi Pancake thinner so next time I would cook it in two batches (or just use a much bigger pan) and be more diligent in pressing the pancake down with my spatula while I am cooking the pancake.
For the dipping sauce I just used soy sauce, sesame oil and spicy chili sauce.
This dish was really a great late night snack and it doesn't hurt that the simple ingredients makes it easy to throw together when the craving hits.
